Ingredients:
- 1 cup (150g) mashed ripe avocado
- 2 large (200g) overripe bananas, mashed
- 2 large (100g) eggs, room temperature
- 1/2 cup (120ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) lemon juice
- 2 cups (250g) whole wheat flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (60g) chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- In a large bowl, mash the avocado and bananas together until smooth.
- Whisk in the eggs, maple syrup, vanilla, and lemon juice until the mixture is uniform.
- In a separate small bowl, whisk together the whole wheat flour, baking soda, salt, and cinnamon.
- Gently pour the dry ingredients into the wet base and fold with a spatula until just combined; do not overmix.
- Fold in the chopped walnuts if using.
- Pour the batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
