Ingredients:

  • 1 cup (150g) mashed ripe avocado
  • 2 large (200g) overripe bananas, mashed
  • 2 large (100g) eggs, room temperature
  • 1/2 cup (120ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) lemon juice
  • 2 cups (250g) whole wheat flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) sea salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. In a large bowl, mash the avocado and bananas together until smooth.
  3. Whisk in the eggs, maple syrup, vanilla, and lemon juice until the mixture is uniform.
  4. In a separate small bowl, whisk together the whole wheat flour, baking soda, salt, and cinnamon.
  5. Gently pour the dry ingredients into the wet base and fold with a spatula until just combined; do not overmix.
  6. Fold in the chopped walnuts if using.
  7. Pour the batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
