Ingredients:

  • 2 cups (300g) cherry tomatoes, halved
  • 8 oz (225g) mini mozzarella balls (bocconcini), drained
  • 2 medium (340g) ripe avocados, cubed
  • ½ cup (15g) fresh basil leaves, chiffonade or torn
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) balsamic glaze
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) freshly cracked black pepper

Instructions:

  1. Wash the cherry tomatoes and halve them lengthwise.
  2. Dice the avocados into ¾ inch cubes, ensuring they are firm enough to hold their shape.
  3. Slice the fresh basil into thin ribbons (chiffonade).
  4. In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, salt, and pepper until the mixture is glossy and slightly thickened.
  5. Place the tomatoes, mozzarella balls, and avocado cubes into a large mixing bowl.
  6. Pour the dressing over the ingredients and fold together gently using a rubber spatula or large spoon until coated in a mahogany-colored sheen; do not over-mix.
  7. Fold in the fresh basil at the very last second to prevent bruising.
