Ingredients:

  • 1/2 cup (115g) unsalted butter, browned and slightly cooled
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g), room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (4g) cream of tartar
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (50g) granulated sugar
  • 2 tbsp (8g) ground cinnamon

Instructions:

  1. Brown the butter in a skillet over medium heat until it smells nutty and turns a deep amber. Allow it to cool slightly.
  2. Cream the browned butter with 3/4 cup granulated sugar until the mixture is pale and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Whisk together the flour, cream of tartar, baking soda, and salt in a separate bowl.
  5. Gradually fold the dry ingredients into the wet ingredients, mixing only until flour streaks disappear to maintain a soft texture.
  6. Scoop rounded tablespoons of dough and roll into 1-inch balls.
  7. Roll each ball in the cinnamon-sugar mixture, then roll a second time for maximum coating.
  8. Place on parchment-lined baking sheets and bake at 350°F (175°C) for 9-11 minutes until edges are set but centers remain slightly underdone.
