Ingredients:
- 1/2 cup (115g) unsalted butter, browned and slightly cooled
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g), room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (4g) cream of tartar
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/4 cup (50g) granulated sugar
- 2 tbsp (8g) ground cinnamon
Instructions:
- Brown the butter in a skillet over medium heat until it smells nutty and turns a deep amber. Allow it to cool slightly.
- Cream the browned butter with 3/4 cup granulated sugar until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Whisk together the flour, cream of tartar, baking soda, and salt in a separate bowl.
- Gradually fold the dry ingredients into the wet ingredients, mixing only until flour streaks disappear to maintain a soft texture.
- Scoop rounded tablespoons of dough and roll into 1-inch balls.
- Roll each ball in the cinnamon-sugar mixture, then roll a second time for maximum coating.
- Place on parchment-lined baking sheets and bake at 350°F (175°C) for 9-11 minutes until edges are set but centers remain slightly underdone.
