Ingredients:

  • 2 lbs fresh green beans, trimmed and snapped
  • 1 lb smoked ham hock
  • 1 cup low-sodium chicken broth
  • 1 tbsp unsalted butter, cubed
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, smashed
  • 1 tsp black pepper, freshly cracked
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes

Instructions:

  1. Place the sliced onions and smashed garlic at the bottom of the Crock Pot to create a flavor bed.
  2. Layer the trimmed green beans over the aromatics.
  3. Nestle the ham hock in the center of the beans.
  4. Pour the chicken broth over the top and scatter the butter cubes, black pepper, smoked paprika, and red pepper flakes across the surface.
  5. Cover and cook on Low for 6 hours, until beans are deep olive-brown and the ham hock meat slides off the bone.
