Ingredients:
- 2 lbs fresh green beans, trimmed and snapped
- 1 lb smoked ham hock
- 1 cup low-sodium chicken broth
- 1 tbsp unsalted butter, cubed
- 1 medium yellow onion, thinly sliced
- 3 cloves garlic, smashed
- 1 tsp black pepper, freshly cracked
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes
Instructions:
- Place the sliced onions and smashed garlic at the bottom of the Crock Pot to create a flavor bed.
- Layer the trimmed green beans over the aromatics.
- Nestle the ham hock in the center of the beans.
- Pour the chicken broth over the top and scatter the butter cubes, black pepper, smoked paprika, and red pepper flakes across the surface.
- Cover and cook on Low for 6 hours, until beans are deep olive-brown and the ham hock meat slides off the bone.
