Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon salt
  • 1.5 cups whole milk
  • 0.25 cup unsalted butter, melted and cooled
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt for 30 seconds to ensure even distribution of the leavening agent.
  2. In a separate medium pitcher or bowl, whisk the egg, milk, vanilla extract, and cooled melted butter until the egg is fully incorporated.
  3. Create a well in the center of the dry ingredients and pour in the wet mixture. Use a spatula to fold until just combined, leaving small lumps in the batter. Do not over-mix.
  4. Allow the batter to rest for 5 minutes. This allows the flour to hydrate and the baking powder to activate.
  5. Heat a non-stick skillet over medium-low heat. Lightly brush with butter and pour batter onto the skillet. Cook until bubbles form on the surface and the edges set, then flip and cook until golden brown on the second side.
