Ingredients:

  • 1 lb fresh rhubarb, washed and sliced into 1/2 inch pieces
  • 1 cup granulated sugar
  • 2 tbsp water
  • 1 tbsp unsalted butter
  • 1/8 tsp fine sea salt
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract

Instructions:

  1. Wash the rhubarb stalks thoroughly, trim off the leaves, and slice the stalks into uniform 1/2 inch pieces.
  2. Combine the sliced rhubarb, sugar, water, and salt in a medium saucepan over medium heat.
  3. Lower the heat to medium-low and simmer for 8–10 minutes until the rhubarb is tender and translucent but not completely disintegrated.
  4. Remove the pan from the heat and stir in the butter, lemon juice, and vanilla extract until completely melted and incorporated.
