Ingredients:
- 1 lb fresh rhubarb, washed and sliced into 1/2 inch pieces
- 1 cup granulated sugar
- 2 tbsp water
- 1 tbsp unsalted butter
- 1/8 tsp fine sea salt
- 1 tsp fresh lemon juice
- 1/2 tsp vanilla extract
Instructions:
- Wash the rhubarb stalks thoroughly, trim off the leaves, and slice the stalks into uniform 1/2 inch pieces.
- Combine the sliced rhubarb, sugar, water, and salt in a medium saucepan over medium heat.
- Lower the heat to medium-low and simmer for 8–10 minutes until the rhubarb is tender and translucent but not completely disintegrated.
- Remove the pan from the heat and stir in the butter, lemon juice, and vanilla extract until completely melted and incorporated.
