Ingredients:

  • 1 lb fresh green beans, trimmed
  • 4 cups water
  • 1 tbsp kosher salt
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp maple syrup
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh Italian parsley, chopped
  • 1 tbsp lemon juice

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Drop in the trimmed green beans and cook for 3 to 4 minutes until tender-crisp.
  2. Immediately drain the beans using a colander and plunge them into a bowl of ice water for 2 minutes. Drain again and pat dry with a towel.
  3. In a small jar or bowl, combine the olive oil, apple cider vinegar, Dijon mustard, maple syrup, garlic powder, salt, and pepper. Whisk or shake until emulsified.
  4. Place the chilled beans, sliced red onion, and chopped parsley in a large bowl. Pour the dressing over the top, toss gently, and finish with a squeeze of fresh lemon juice.
