Ingredients:
- 1 lb fresh green beans, trimmed
- 4 cups water
- 1 tbsp kosher salt
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp maple syrup
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh Italian parsley, chopped
- 1 tbsp lemon juice
Instructions:
- Bring a large pot of salted water to a rolling boil. Drop in the trimmed green beans and cook for 3 to 4 minutes until tender-crisp.
- Immediately drain the beans using a colander and plunge them into a bowl of ice water for 2 minutes. Drain again and pat dry with a towel.
- In a small jar or bowl, combine the olive oil, apple cider vinegar, Dijon mustard, maple syrup, garlic powder, salt, and pepper. Whisk or shake until emulsified.
- Place the chilled beans, sliced red onion, and chopped parsley in a large bowl. Pour the dressing over the top, toss gently, and finish with a squeeze of fresh lemon juice.
