Ingredients:

  • 1 lb fresh rhubarb, sliced into ½ inch pieces

  • ¾ cup granulated sugar
  • 1 tbsp fresh lemon juice
  • ¼ tsp salt

Instructions:

  1. Combine the sliced rhubarb, water, and granulated sugar in the skillet. Stir gently to ensure the rhubarb is evenly coated in sugar, which begins the process of drawing out the moisture.
  2. Place the skillet over medium-high heat. Bring the mixture to a simmer, stirring occasionally. Cook for 10-12 minutes, or until the rhubarb stalks have collapsed and the liquid has thickened into a glossy, velvety syrup.
  3. Remove the skillet from the heat. Stir in the fresh lemon juice and salt. Let the sauce cool for 5 minutes before transferring to a container.
