Ingredients:
- 1 lb fresh string beans, trimmed
- 1 tbsp avocado oil
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp toasted sesame oil
- 1 tsp maple syrup
- 1 tsp rice vinegar
- 1 tsp toasted sesame seeds
- 1/2 tsp crushed red pepper flakes
Instructions:
- Whisk the soy sauce, toasted sesame oil, maple syrup, and rice vinegar in a small bowl. Note: Mixing this first ensures the syrup doesn't burn in the pan.
- Heat avocado oil in a wok or cast iron skillet over medium high heat until it shimmers.
- Add the beans in a single layer. Let them sit undisturbed for 2-3 minutes until mahogany colored charred spots appear.
- Toss the beans. Cook for another 2 minutes until they are bright green but look slightly shriveled.
- Turn the heat down to medium. Stir in the minced garlic and red pepper flakes, sautéing for 30 seconds until you can smell the garlic.
- Pour the soy sesame glaze over the beans.
- Toss rapidly for 1 minute until the sauce thickens into a glossy coating.
- Remove from heat immediately.
- Garnish with toasted sesame seeds.
