Ingredients:

  • 1 lb fresh string beans, trimmed
  • 1 tbsp avocado oil
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp maple syrup
  • 1 tsp rice vinegar
  • 1 tsp toasted sesame seeds
  • 1/2 tsp crushed red pepper flakes

Instructions:

  1. Whisk the soy sauce, toasted sesame oil, maple syrup, and rice vinegar in a small bowl. Note: Mixing this first ensures the syrup doesn't burn in the pan.
  2. Heat avocado oil in a wok or cast iron skillet over medium high heat until it shimmers.
  3. Add the beans in a single layer. Let them sit undisturbed for 2-3 minutes until mahogany colored charred spots appear.
  4. Toss the beans. Cook for another 2 minutes until they are bright green but look slightly shriveled.
  5. Turn the heat down to medium. Stir in the minced garlic and red pepper flakes, sautéing for 30 seconds until you can smell the garlic.
  6. Pour the soy sesame glaze over the beans.
  7. Toss rapidly for 1 minute until the sauce thickens into a glossy coating.
  8. Remove from heat immediately.
  9. Garnish with toasted sesame seeds.
