Ingredients:

  • 1 lb fresh rhubarb, chopped into ½ inch pieces
  • ⅓ cup pure maple syrup
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 pinch salt

Instructions:

  1. Wash the rhubarb thoroughly and pat dry. Slice the stalks into uniform ½ inch pieces to ensure they cook evenly.
  2. Combine the chopped rhubarb, maple syrup, and lemon juice in a saucepan over medium heat. Stir occasionally and cook for 8–10 minutes, or until the rhubarb has softened and released its juices.
  3. Remove the pan from the heat. Stir in the vanilla extract, salt, and cinnamon.
