Ingredients:
- 1 lb fresh rhubarb, chopped into ½ inch pieces
- ⅓ cup pure maple syrup
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1 pinch salt
Instructions:
- Wash the rhubarb thoroughly and pat dry. Slice the stalks into uniform ½ inch pieces to ensure they cook evenly.
- Combine the chopped rhubarb, maple syrup, and lemon juice in a saucepan over medium heat. Stir occasionally and cook for 8–10 minutes, or until the rhubarb has softened and released its juices.
- Remove the pan from the heat. Stir in the vanilla extract, salt, and cinnamon.
